Easy Baked Cauliflower with Parmesan

This is a super easy side dish to throw together and pop in the oven.  It is really simple with only a few ingredients that you probably already have on hand!

Easy Baked Cauliflower with Parmesan

2 (16 oz.) bags of frozen cauliflower florets

1/4 to 1/2 teaspoon sea salt (adjust to your taste)

1/4 teaspoon ground black pepper

2 1/2 tablespoons butter

1/3 cup freshly grated Parmesan cheese (I substitute Kraft Shredded (or Grated) Parmesan Cheese for the fresh Parmesan)

Preheat oven to 425°F.  Lightly coat a 3-quart baking dish with butter.

Prepare the frozen cauliflower according to the microwave directions on the package until slightly softened.  For two (2) 16 oz. bags, the directions will usually have you put the frozen cauliflower in a glass baking dish, add 4 tablespoons of water, cover and microwave on HIGH for 10-12 minutes.  (Note: Do not overcook – use the shorter cooking time since the cauliflower will continue to cook in the oven).  Drain the cauliflower.

Place the cooked cauliflower florets in the prepared 3-quart baking dish, arranging them in tight layers.  Sprinkle the sea salt and the black pepper evenly over the top of the cauliflower and dot with the butter.  Sprinkle the Parmesan cheese evenly over the top.

Bake uncovered for about 30 minutes, or until lightly browned on top.
