Easy Coconut Pie

4 tablespoons butter, melted

2 eggs, beaten

1 tablespoon all-purpose flour

¾ cup sugar

1 cup shredded sweetened coconut

1 cup milk

1 9-inch unbaked pie crust

 

Combine melted butter, eggs, flour, sugar, coconut and milk in a large bowl.  Pour the mixture into the unbaked pie crust.  (If you are using a frozen unbaked pie crust in a tin foil pan, place the pan on a cookie sheet, pour the filling in and put it in the oven on the cookie sheet).

Bake at 350°F for 50 to 60 minutes or until firm.  (Check the pie after 20 to 25 minutes of baking to see if the edges of the crust are getting brown – cover the edges with strips of aluminum foil to prevent over-browning, if necessary).

Cool the pie on a wire rack before serving.
